- Water 4 tablespoons
- Starch film 1 tablespoon
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
Prepare the dough by mixing flour, sugar, cinnamon, and salt. Add cottage cheese and butter. Knead until soft dough forms. Transfer it to a floured surface and knead a little more, then shape it into a ball. Wrap the dough in plastic wrap and refrigerate for 30 minutes while you make the filling.
Step 2
Peel the washed apples and cut them into cubes. Place the chopped apples in a pot with sugar, butter, and cinnamon. Heat over medium heat until the butter melts, then add 2 tablespoons of water. Cover and cook for 10-12 minutes (the apples should become soft). Mix the starch with two tablespoons of water and add this mixture to the apples. Cover and simmer for another 1-2 minutes until thickened (a slightly jelly-like consistency should result). Remove from heat. Let the filling cool for about 15 minutes.
Step 3
If you plan to bake the pies, preheat the oven to 375°F (375 degrees Fahrenheit), and line 2 baking sheets with parchment paper. Roll out the chilled dough thinly. Use a knife to cut 9 squares (15 cm x 15 cm) from the dough. Place a heaping tablespoon of apple filling (or 1 tablespoon + 1 teaspoon) on one half of each square. Close with the other half and seal tightly. Place the pies on the baking sheet. If baking, make 3 slits on each pie and bake for 25 minutes until golden brown. Cool for 5-10 minutes.
Step 4
If you plan to deep-fry the pies, refrigerate them for an hour (or freeze). Heat the oil (about 5 cm deep). Directly from the refrigerator, drop the pies in batches into the hot oil, and fry until golden brown. Frying time varies from 2 to 3 minutes. Remove the pies from the oil and place them on a baking sheet lined with paper towels to absorb excess fat. Let cool for 5-10 minutes.
