Apple-Onion Tartlets
Ingredients
- Olive Oil 1 tablespoon
- Butter 1 tablespoon
- Apple 3 pieces
- Spanish onions 8 heads
- Apple Cider Vinegar 3 tablespoons
- Coarse Salt to taste
- Wheat Flour to taste
- Shortcrust Cake Mix 20 oz
- Manchego cheese 5 oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the apples and remove the cores, then slice them thinly. Peel the onions and slice them into thin half-rings. Grate the cheese.
Step 2
Heat the olive oil and butter in a pan over medium heat. Add the onions and apples and sauté until golden brown for 15 minutes. Cover with a lid, reduce the heat to very low, and cook for another 30–35 minutes until the apples and onions caramelize. Drizzle with vinegar and season with salt. Cook for another 5 minutes. Let cool.
Step 3
On a floured surface, roll out the pastry thinly and cut out 6 circles with a diameter of 18 cm (re-rolling the leftover pastry if necessary). Place them on a baking sheet lined with foil.
Step 4
In a blender, puree half of the onion-apple mixture. Spread 3 tablespoons of the puree on each circle, leaving a small edge. Sprinkle with half of the cheese and freshly ground pepper. Then distribute the remaining onion-apple mixture and sprinkle with the remaining cheese. Carefully fold the edges of the pastry inward, pressing lightly. Refrigerate for 30 minutes.
Step 5
Meanwhile, preheat the oven to 355°F.
Step 6
Bake the tartlets for about 40–45 minutes until golden brown. Serve warm.
