Ingredients

  • Apple 1½ pieces
  • Wheat Flour 0.7 cups
  • Oat flakes 1½ cups
  • Meyer Lemon Juice 5 fl oz
  • Citrus Zest Mix ½ piece
  • Light Raisins, Seedless 2 tablespoons
  • Chopped almonds 1 tablespoon
  • Honey 3 tablespoons
  • Vegetable Oil 1 tablespoon
  • Baking Powder ½ teaspoon
  • Ground Cinnamon ½ teaspoon

Step-by-Step Guide

Step 1

Soak the raisins in warm water for 10–15 minutes. Afterward, drain the water and place the raisins in a colander.

Step 2

Chop the nuts coarsely.

Step 3

In a large bowl, mix the flour, oat flakes, baking powder, lemon zest, and cinnamon.

Step 4

Grate one whole apple into a puree, and dice half an apple. Drizzle both parts with lemon juice.

Step 5

Combine the apple puree with vegetable oil and honey (can be substituted with maple syrup or sugar). Add the mixture to the flour mixture. Stir well.

Step 6

Add the raisins, diced apples, and nuts to the dough. Mix and let the dough rest for 15 minutes. It should not be dry, but also not too wet.

Step 7

Meanwhile, preheat the oven to 355°F.

Step 8

Line a baking sheet with parchment paper and grease it with vegetable oil.

Step 9

Scoop the dough with a teaspoon, form a ball with your hands, and slightly flatten it. Place the baking sheet with the cookies in the oven for 10–15 minutes (it took me 12), until the edges start to brown. Let them cool slightly afterward, then transfer to a plate.
