Apple Muffins (Vegan)
Ingredients
- Apple 1 piece
- Bananas 2 pieces
- Wheat Flour 5 oz
- Oats ¾ cup
- Extra virgin olive oil 6 tablespoons
- Soy Milk 8 tablespoons
- Sugar 4 tablespoons
- Baking Powder 1 teaspoon
- Salt ¼ teaspoon
- Coconut flakes a pinch
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
Cut one large or two small apples into small cubes and place them in a large bowl. Mash the bananas (they should be black — the riper, the better) into a smooth mixture and mix with the apple.
Step 3
Add the remaining ingredients (except for the coconut flakes) to the fruits and mix well.
Step 4
Divide the batter into muffin cups (should make about 12), sprinkle with coconut flakes, and bake for 20 minutes.
