Description
Marshmallows can be made from any berries and fruits.
Ingredients
- Apple 15 oz
- Gelatin 0 oz
- Agar-Agar 0 oz
- Citric Acid 1 tablespoon
- Egg white 6 pieces
Step-by-Step Guide
Step 1
Bake 400 grams of apples and strain through a sieve. Rinse 50 grams of agar-agar or gelatin, cover with cold water, and let it swell for 3–4 hours. Then, place the swollen mass over heat and bring to a boil. In the boiling liquid, add 1.5 cups of sugar and cook until a drop of syrup placed on a plate does not spread. After that, add the previously prepared apple puree to the syrup and bring to a boil.
Step 2
Pour the hot syrup in a thin stream into the whipped egg whites (you need six), continuing to beat the mixture. Add the citric acid diluted in a tablespoon to taste. The marshmallow is almost ready. While it is warm, pour it into molds or a water-moistened baking tray. Once cooled, it can be cut into any shape.
