Apple filling with Calvados
Ingredients
- Apple 4 pieces
- Butter 2 tablespoons
- Lime Juice 3 tablespoons
- Sugar 3 tablespoons
- Raisins 3 tablespoons
- Ground Cinnamon ¼ tablespoon
- Vanillin ⅓ teaspoon
- Wheat Flour 1½ tablespoons
- Calvados 5 fl oz
Step-by-Step Guide
Step 1
Core and peel the apples, then cut them into 1 cm cubes. Pour lime juice over them and mix to prevent browning.
Step 2
Heat butter in a saucepan or deep skillet, add raisins and sauté over medium heat for 1 minute (essentially, to soak them in the butter). Transfer to a small plate.
Step 3
In the same saucepan, add the apples, sugar, cinnamon, and vanillin. Stirring, sauté for 3 minutes.
Step 4
Pour in the Calvados and add the raisins. Mix in the flour (when combined with the butter and sugar, it will become sticky and brown, resembling honey).
Step 5
Reduce heat to low and cover the saucepan with a lid. Leave for 5–8 minutes (watching to prevent burning and ensuring the apples soften slightly but retain their shape).
Step 6
The filling is ready. From here, the imagination can take over. If making open boxes like I do, gently brush the dough and filling with egg and sprinkle each box with a pinch of sugar. Bake at 390°F for 10 minutes, then another 10 minutes at 355°F.
