Ingredients
- Pickled Apples 2 pieces
- Cottage cheese 10 oz
- Butter 5 oz
- Wheat Flour 10 oz
- Chicken Egg 1 piece
- Sugar 0 oz
- Thyme to taste
Step-by-Step Guide
Step 1
Rub the soft butter (100 g) into crumbs with the flour.
Step 2
Add sugar (50 g) and the egg to the resulting butter-flour crumbs. Knead the dough. The dough should be soft, without lumps, and feel like playdough. Place the dough in the refrigerator while preparing the filling.
Step 3
Peel the apples, and cut them into wedges (or squares, whichever you prefer).
Step 4
Sauté the prepared apples in butter (50 g) with sugar (50 g) for 5–7 minutes.
Step 5
Roll out the chilled dough into a large circle (the dough should yield a circle about 30 cm in diameter). I roll it out directly on parchment paper.
Step 6
Spread the cottage cheese on the rolled-out dough (leave 2–3 cm without filling for folding), then top with the caramelized apples and sprinkle with fresh thyme leaves (use a little thyme, as it can overpower the flavor). Fold the edges and place it in a baking dish.
Step 7
Send the galette to a preheated oven at 390°F. Bake until done, about 20–25 minutes.
