Apple-Cottage Cheese Cake
Ingredients
- Sugar 10 oz
- Butter 5 oz
- Cottage cheese 5 oz
- Farm fresh eggs 3 pieces
- Baking Powder ½ teaspoon
- Vanilla salt to taste
- Cinnamon 2 teaspoons
- Apple 2 pieces
- Citrus Zest Mix 2 tablespoons
- Orange zest 1 piece
- Honey 2 teaspoons
- Blackcurrant liqueur 5 tablespoons
- Mini Chocolate Chips to taste
- Wheat Flour 10 oz
Step-by-Step Guide
Step 1
Beat the sugar and room temperature butter until the sugar is completely dissolved, add vanilla, and mix. Gradually add the pre-mashed cottage cheese. Then, add the eggs one at a time.
Step 2
Mix the flour with the lemon and orange zest and baking powder, and gradually incorporate it into the main mixture in small portions. Finally, add honey and cinnamon, and you may add a little salt.
Step 3
Peel the apples (preferably sour varieties). Chop them finely and fold them into the batter.
Step 4
Grease a baking tray with butter and line it with parchment paper, greasing it again with butter. Pour in the batter. Start adding the jam on top, creating whimsical patterns. Bake at 355°F for 60–70 minutes. When the cake is almost ready, sprinkle chocolate on top and return it to the oven for a couple more minutes.
