Ingredients
- Coarsely Ground Rye Flour 1 cup
- Self-rising flour 1 cup
- Baking Powder 1 teaspoon
- Salt ¼ teaspoon
- Activated Baking Soda 1 teaspoon
- Ground Cinnamon 1 tablespoon
- Butter 5 oz
- Sugar ½ cup
- Brown Sugar ¾ cup
- Buttermilk 1 cup
- Whole egg 1 piece
- Apple 2 pieces
Step-by-Step Guide
Step 1
Preheat the oven to 375°F. Grease a muffin tin or place paper liners in each cup.

Peel and core 2 large apples and chop them finely.
Step 3
In a bowl, mix both flours, baking powder, baking soda, salt, and cinnamon.

In another bowl, beat the softened butter with sugar and ¼ cup of brown sugar until creamy.

Add the egg and buttermilk and mix slightly.

Then, incorporate the dry ingredients and stir with a wooden spoon.

Add the apples and gently mix with a wooden spoon.

Spoon the batter into the muffin cups and sprinkle the remaining sugar on top.

Bake for 25-30 minutes until done, checking with a toothpick.

Cool for a few minutes in the pan and transfer to a wire rack.
