Apple, Cherry, and Marzipan Tart
Baking and Desserts • European
Description
Marzipan with sherry gives an incomparable aroma and flavor. However, due to the sweetness of the marzipan, it is quite challenging not to over-sweeten, so when adding sugar, remember that both the berries and the filling should taste slightly under-sweetened.

Prepare the dough: mix room temperature butter with flour, then add cottage cheese, flour, and vanilla, about 60 grams of sugar, wrap in plastic wrap, and refrigerate for an hour.
Step 2
Peel the apples and cut them into small pieces, mix with the cherries, add half of the remaining sugar, and pour in the sherry.

Roll out the marzipan into a thin layer (about 3 mm thick).
Step 4
Place the dough in a tart pan, forming the edges, and cover it with the marzipan, ensuring the entire surface is covered.
Step 5
Drain the cherries and apples in a colander, allowing the juice to flow into a bowl, and place them on top of the marzipan.
Step 6
Gently heat the juice, add the remaining sugar, and cool it down. Mix with the sour cream and pour this mixture over the tart. Top with almond flakes.
Step 7
