Description

This apple charlotte is the result of extensive observations by Alex Johnson. The dough is a traditional recipe made with mayonnaise. The filling is slightly more complex, consisting of caramelized apples flavored with aromatic liquor. The finished charlotte will have a pronounced apple flavor, but the apples themselves will not be visible — they will completely dissolve into the dough.

Ingredients

  • Mayonnaise 5 oz
  • Sugar 5 oz
  • Condensed Milk 5 oz
  • Chicken Egg 6 pieces
  • Wheat Flour 5 oz
  • Vanilla salt 0 oz
  • Butter 0 oz
  • Rum 0 fl oz
  • Apple 0 lbs

Step-by-Step Guide

Step 1

Add 6 egg yolks to the mayonnaise. Whisk well using a whisk or any other tools.

Step 2

Add sugar — about 100 grams on average. Whip again.

Step 3

Add sweetened condensed milk to give the charlotte a dulce de leche flavor.

Step 4

Then add 200 grams of all-purpose flour and 5 grams of vanilla sugar to the sugar-mayonnaise mixture. Mix well again.

Step 5

Finally, gradually fold in 6 egg whites that have been whipped to stiff peaks using a spatula. It's not advisable to add all the egg whites to the charlotte at once.

Step 6

Remove the seeds from the apples and slice them into wedges of any size.

Step 7

Place 50 grams of butter in a cold skillet and heat it up, then add 50 grams of sugar. Sauté the apples in this skillet until caramelized, about 10 minutes over medium heat. The apples should become very soft so they can fully dissolve into the batter during baking. Finally, add a shot of rum or brandy to the skillet.

Step 8

Once the apples have cooled slightly, mix them well with the batter and pour everything into a baking dish that has been greased with butter. Place it in the oven preheated to 375°F for 30 to 40 minutes.
