Step-by-Step Guide

Step 1

Prepare the filling with apples and honey. First, peel the apples and cut them into small slices; the size doesn't need to be exact, but they should definitely be smaller than a quarter of an apple. Place a skillet over medium-high heat, add a piece of butter, and wait for it to melt and heat up. Then, add the apples and sauté them for about 5–6 minutes until they turn golden. After that, add the honey. Stir and cover with a lid, simmering the apples for another 5–6 minutes, stirring every minute. Remove from heat and let them cool.

Step 2

Preheat the oven to 375°F. Separate the egg yolks from the whites into different bowls. Whisk the yolks until they turn pale, then add half of the sugar and continue whisking until the mixture is thick and homogeneous. Whisk the egg whites until stiff peaks form, then gradually add the remaining sugar and continue whisking until thickened. Gently fold half of the egg whites into the yolk mixture and carefully sift the flour over it, mixing with a mixer. When you achieve a thick, creamy batter that is slightly yellow, gently fold in the remaining whipped egg whites using a spatula, moving the batter from the bottom to the top until you have a more or less homogeneous mixture (if you don't have a scale or want to increase the batter amount — use approximately 1 tablespoon of flour and 1 tablespoon of sugar per egg).

Step 3

Grease a baking dish with butter and dust it with flour (don’t overdo it with the flour; you don’t need a lot! Enough!), remove the excess flour, and place the apples at the bottom. Pour half of the batter over the apples, add more apples on top, and pour the remaining batter over them. If you calculated the sizes correctly, the apples should not be visible.

Step 4

Bake at 340°F for 20–25 minutes, depending on your oven, baking dish, and luck. It took me 2 unsuccessful attempts to understand how the dish interacts with the new stove. It is common to sprinkle cinnamon or powdered sugar on top, depending on personal preference.
