Apple Caramel Fudge

Description
Perfect as a filling for cupcakes, for example. This recipe yields enough fudge for approximately 8 large cupcakes.
Ingredients
- Antonovka apples 2 pieces
- Sugar 5 oz
- 33% Cream 5 fl oz
Step-by-Step Guide
Step 1
Remove the core from two medium Antonovka (or other tart) apples, cut each into 4 pieces, and simmer in a small amount of water until soft.
Step 2
Peel the cooked apples (the skin comes off easily) and mash them into a puree along with the remaining water.
Step 3
Add the cream and sugar to the puree and, stirring constantly, simmer over low heat until it thickens to a cream-like consistency. Let cool.
