Apple Cake with Baked Quince and Spices

Ingredients

  • Raw cane sugar 15 oz
  • Vanilla Pod 1 piece
  • Cinnamon 1 piece
  • Spices 1 teaspoon
  • Quince 5 lbs
  • Butter to taste
  • Brioche 2 pieces

Step-by-Step Guide

Step 1

Preheat the oven to 355°F. Mix 1 liter of water and sugar in a pot, stir, and heat over medium heat until the sugar dissolves. Break the vanilla pod and extract the seeds. Add everything to the pot along with the cinnamon and spices. Stir and remove from heat.

Step 2

Peel the quince, cut it into 4 pieces, and remove the seeds. Place the fruit on a baking sheet and pour the syrup over it. Cover with foil and bake for 2 hours until soft. Pat dry.

Step 3

Cut the brioche into pieces and spread butter on each piece. Line the bottom of a 2-liter baking dish with the bread. Leaving 4 pieces whole, cut the remaining into small strips. Stand the strips vertically to line the sides of the dish, slightly pressing the flesh.

Step 4

Place the baked quince in the center of the dish and cover with the remaining whole pieces of bread. Place the dish on a baking sheet and bake for 25-30 minutes. Cool for 10 minutes and transfer to a serving plate. Serve drizzled with custard.
