Apple Butter with Lemon Zest
Ingredients
- Butter 2 tablespoons
- Apple 5 lbs
- Apple Cider Vinegar 3 cups
- Lemon ½ piece
- Ground Cinnamon ½ teaspoon
- Grated Lemon Zest 1 teaspoon
Step-by-Step Guide
Step 1
Peel the apples and remove the cores, then cut them into quarters.
Step 2
In a deep skillet, melt the butter and add the apples. Cook until the apples are slightly soft, about 5 minutes. Pour in the vinegar, bring to a boil, reduce the heat, partially cover with a lid, and cook, stirring, until soft, about 30 minutes.
Step 3
Preheat the oven to 250°F.
Step 4
Remove the apples from the heat and mash them with a potato masher until smooth. Add the lemon juice, zest, and cinnamon. Blend again with an immersion blender until smooth.
Step 5
Transfer the apple mixture to a baking dish and place it in the oven, stirring occasionally, until thickened, about 3 to 3.5 hours. Let cool.
