Apple Basil Puree

Description
For a picnic, it's best to keep this puree in a thermos. It should be served very cold — no more than four degrees Celsius.
Ingredients
- Apple 5 lbs
- 10% cream 0 qt
- Raw cane sugar 5 oz
- Lemon 1 piece
- Fresh basil leaves 0 oz
Step-by-Step Guide
Step 1
Peel the apples and remove the cores. Pass them through a meat grinder. Transfer the puree to a deep container and refrigerate for an hour. The cream should also be kept in the refrigerator.
Step 2
After an hour, take out the cream and apple puree and mix them with sugar on a low setting of the mixer until smooth. Add the juice of one lemon, finely chopped leaves of fresh basil, and mix again. Transfer the mixture to a deep plastic container and place it in the refrigerator for another hour.
