
Apple and Plum Charlotte

Description
If the apples have thin skin (homegrown summer varieties), I don't peel them, as it adds a unique flavor. Generally, imported varieties have thick skin — it's better to peel them.
Ingredients
- Apple 20 oz
- Plums 5 oz
- Farm fresh eggs 3 pieces
- Sugar 1 cup
- Wheat Flour 1½ cups
- Activated Baking Soda a pinch
- Cinnamon 1 teaspoon
- Vinegar essence 1 teaspoon
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
In a bowl, beat the eggs with the sugar, then add the baking soda mixed with vinegar.
Step 3
Gradually add the sifted flour to the egg mixture (you may need a bit more or less flour; the consistency should be thick but slightly flowing).
Step 4
Add a heaping teaspoon of cinnamon (in my opinion, this is the optimal amount, but you can add more or skip it altogether).
Step 5
Wash the apples, remove the seeds, and slice them as thinly as possible.
Step 6
Wash the plums and cut them into quarters.
Step 7
Arrange the apple slices nicely in a baking dish, then place the plum pieces on top.
Step 8
Pour the batter over the fruits, ensuring it fills all the gaps between the fruit slices.
Step 9
Bake for 30–40 minutes until the batter has a crispy crust.
