Ingredients
- Apple 3 pieces
- White Part of Leek 1 piece
- Whole egg 2 pieces
- Butter 2 tablespoons
- Chopped Sage Leaves 1 teaspoon
- Bay leaf 1 piece
- Cinnamon ½ teaspoon
- Clove 1 piece
- Sugar ½ teaspoon
- Salt to taste
- Carrot 1 piece
- Frozen spinach discs 5 oz
Step-by-Step Guide
Step 1
To prepare this first course using the vegetarian recipe, sauté grated carrot and spinach in a pot.
Step 2
Peel and chop the leek. Peel the apples, remove the cores, and grate them. Sauté the leek and apples in butter over low heat for about 15 minutes.
Step 3
Mix with the spinach and carrot, add 4 cups of water, salt, spices, and sugar. Cook for 10 minutes. Remove from heat.
Step 4
Stir in the egg yolks and add to the soup. Sprinkle with parsley. The dish can be served with crackers.
