
Apple and Curry Soup

Description
Note: Curry comes in different levels of spiciness, so it's better to start with half the recommended amount, taste it, and if necessary, add the remaining part. Per 100 g: 41.4 kcal, protein – 1.7 g, fat – 2.2 g, carbohydrates – 3.7 g
Ingredients
- Jasmine Rice 2 tablespoons
- Apple 15 oz
- Curry 1 teaspoon
- Whole egg 1 piece
- Sour Cream 5 oz
- Campbell's Beef Broth 10 fl oz
Step-by-Step Guide
Step 1
Pour Campbell's Homestyle Classic chicken broth into a pot, add 750 ml of water, and bring to a boil.
Step 2
Rinse the rice and add it to the boiling broth. Cook for 20 minutes or until the rice is done.
Step 3
Peel the apples, remove the core with seeds. Grate the flesh on a coarse grater. Place the apples in another pot, cover with a small amount of broth, cover with a lid, and cook for 5 minutes or until soft.
Step 4
Using a masher or blender, puree the apples. Add the apple puree to the pot with the broth and rice. Bring to a boil. Remove the pot from the heat. Season the soup with curry.
Step 5
Mix the yolk with the sour cream and stir the mixture into the soup. Heat the soup while stirring, but do not bring it to a boil.
