Ingredients
- Wheat Flour 15 oz
- Butter 10 oz
- Sugar 15 oz
- Whole egg 3 pieces
- Chicken Egg 2 pieces
- Meyer Lemon Juice 1 cup
- Citrus Zest Mix 2 pieces
- Water 0 fl oz
Step-by-Step Guide
Step 1
In the sifted flour, add 225 g of cold butter (cut into pieces), 115 g of sugar, and 3 egg yolks. Mix everything together. Add water and knead the dough.
Step 2
Place the dough in a parchment-lined baking dish and smooth the edges. Put it in a preheated oven at 390°F for 30–40 minutes.
Step 3
For the filling, cream the remaining sugar with the butter. Add the eggs and grated lemon zest. Add the lemon juice.
Step 4
In a water bath, cook the mixture, stirring constantly, until it thickens. Let it cool.
Step 5
Cut the cake into two parts and spread the cream on top. The pie can be dusted with powdered sugar.
