Don’t overlook the cream of tartar — it helps stabilize the egg whites, preventing the cake from collapsing. Typically, after baking, nothing else is done with the angel food cake; it is simply drizzled with a sugar glaze. When cutting the finished cake, it’s best to use a serrated knife: a straight-edged kitchen knife will squish it.
