Andalusian Gazpacho with Croutons
Ingredients
- Country Bread 1 piece
- Cucumbers 2½ pieces
- Tomatoes 35 oz
- Garlic 1 clove
- Sherry Vinegar 2 tablespoons
- Olive Oil 1 cup
- Salt to taste
- Green Pepper 1 piece
- Croutons to taste
- Onion 1 head
Step-by-Step Guide
Step 1
Soak the bread in a small bowl of water for 30 minutes. Squeeze out the water with your hands.
Step 2
Blend the bread with cucumbers, tomatoes, garlic, vinegar, olive oil, and 1 cup of water until smooth.
Step 3
Pass the mixture through a coarse sieve. The soup should be quite liquid. Season with salt to taste.
Step 4
Chill the soup in the refrigerator for at least 2 hours. Serve in glasses or bowls, garnished as desired.
