Andalusian Fish Soup
Ingredients
- Onion 2 heads
- Garlic 2 cloves
- Orange zest 1 piece
- Monkfish tail 20 oz
- Fish Oil 0 qt
- Lime 1 piece
- Ocean salt to taste
- Ground Black Pepper to taste
- Parsley 1 bunch
Step-by-Step Guide
Step 1
Chop the onion and garlic and sauté with olive oil, salt, and pepper.
Step 2
Grate the orange zest. Add it to the onion and garlic mixture. Drizzle with orange juice.
Step 3
Pour the onion-garlic mixture with fish broth, bring to a boil, and cook for 10 minutes.
Step 4
Add the monkfish fillet to the soup. Cook for 5 minutes.
Step 5
Garnish the soup with chopped herbs. Add a few pieces of orange pulp. Drizzle with lime juice.
