Description
The butter should be of high quality with a high fat content. You can bake with margarine, but the taste will not be the same: the cookies will turn out crispier. Bring the butter and eggs to room temperature.
Ingredients
- All-purpose flour 1¾ cups
- Butter 5 oz
- Brown Sugar 1 cup
- Eggs 2 pieces
- Salt ½ teaspoon
- Granulated sugar 2 tablespoons
- Baking Soda ½ teaspoon
- Baking Powder ½ teaspoon
- Chocolate 5 oz
- Instant coffee 2 teaspoons
- Nuts 5 oz
- Cinnamon to taste
- Turmeric to taste
- Ground coriander to taste
- Cocoa Powder to taste
- Honey to taste
Step-by-Step Guide
Step 1
Beat the butter with sugar and vanilla extract (vanillin or vanilla sugar) until airy and white. Add the eggs and beat again until homogeneous. You can reduce the amount of sugar by half, as the cookies can turn out too sweet. Place the mixture in the refrigerator. Put the chocolate in the freezer. Preheat the oven to 355°F.
Step 2
Sift the flour. Add salt, baking soda, baking powder with saffron (for aroma, but you can skip the saffron), instant coffee (optional), nuts (preferably salted roasted peanuts or walnuts), and mix until homogeneous.
Step 3
To the butter-sugar mixture, add cinnamon, turmeric, coriander, cardamom, cocoa powder, and liquid honey to taste. If the honey is very thick, it can be warmed in a water bath. Mix everything thoroughly and combine with the dry mixture. Mix again thoroughly and place in the refrigerator.
Step 4
Line a baking sheet with parchment paper.
Step 5
Take the dough with hands moistened in cold water, roll it into a ball, and place it on the paper. For convenience, keep a bowl of water nearby.
Step 6
Take the chocolate out of the freezer and chop it into pieces. Press pieces of chocolate into the tops of the dough balls. The chocolate can be any type, but remember that white and any ultra-milk chocolate melt very quickly and leave an unpleasant sugary taste at high temperatures. For simplicity, you can use chocolate chips, but I prefer large pieces of chocolate.
Step 7
Bake the cookies for no more than 20 minutes. In my case, it's always 10. They are taken out of the oven, cooled on the paper for 10 minutes, and served with a glass of warm milk.
