American Pineapple Pie

Ingredients

  • All-purpose flour 1 cup
  • Butter 5 oz
  • Brown Sugar ¾ cup
  • Sugar ¾ cup
  • 10% cream 5 fl oz
  • Sour Cream 3 tablespoons
  • Egg 1 piece
  • Canned Pineapple 20 oz
  • Cocktail cherries 15 pieces
  • Baking Powder 2 teaspoons
  • Vegetable Oil 3 tablespoons
  • Vanilla extract 2 teaspoons
  • Salt a pinch
  • Ground Pistachios to taste

Step-by-Step Guide

Step 1

Preheat the oven to 170 °C.

Step 2

Melt the butter and pour it into the bottom of a round baking dish with a diameter of 22-24 cm and high sides. Grease the sides of the dish with butter using a brush.

Step 3

Evenly sprinkle the melted butter with brown sugar.

Step 4

Remove the pineapple rings from the can and shake off the liquid.

Step 5

Place a whole pineapple ring in the center of the dish, cut the remaining rings in half and fill the bottom of the dish with them.

Step 6

Arrange the leftover pieces along the sides at a small distance from each other. Place the cherries in the empty spaces.

Step 7

Sift the flour with salt and baking powder into a bowl, and mix with sugar.

Step 8

In another bowl, lightly beat the egg, add sour cream, vegetable oil, cream, and vanilla extract.

Step 9

Pour the resulting mixture into the bowl with flour and sugar, and quickly knead the dough.

Step 10

Spread the dough over the pineapples (it should fill the dish about ¾ of the way up) and smooth it out.

Step 11

Place the dish in the oven and bake the pie for about 30-40 minutes. Check for doneness with a wooden stick.

Step 12

Remove the finished pie from the oven and let it cool in the dish on a rack for at least 30 minutes.

Step 13

Cover the cooled pie with a plate and carefully flip it over. Garnish with chopped pistachios (if desired).
