
American Pecan Pie

Description
Instead of molasses, you can use corn syrup. The pie crust can be prepared in advance or purchased ready-made.
Ingredients
- Wheat Flour 5 oz
- Butter 10 oz
- Salt ½ teaspoon
- Water 5 tablespoons
- Brown Sugar 10 oz
- Light Molasses 5 oz
- Vanilla extract 2 teaspoons
- Rum 2½ tablespoons
- Farm fresh eggs 3 pieces
- Vanilla Ice Cream to taste
- Pecan 2½ cups
Step-by-Step Guide
Step 1
Combine the flour, diced butter (125 g), and a quarter teaspoon of salt by hand or using a mixer with a dough attachment until you achieve a crumbly mixture with butter pieces the size of peas.
Step 2
Sprinkle the dough with 3 tablespoons of ice water and mix again. Try to squeeze a portion of the dough into a ball—if it crumbles, add half a tablespoon of water at a time until the desired consistency is reached.
Step 3
Place the dough on a floured surface and divide it into 4 portions. Fold each portion in 4 like a handkerchief. Then combine them all together and shape into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
Step 4
Preheat the oven to 375°F.

Roll out the dough on a lightly floured surface so that the circle fits into the baking pan with an additional 3 cm for the edges, line the bottom and sides of the pan, and trim the excess. Prick the bottom several times with a fork and freeze for 10 minutes (or chill for 30 minutes).

Chop half of the pecans.
Step 7
For the filling, melt the remaining butter over medium heat. Add the sugar and stir until it melts. Remove from heat and stir in the molasses, vanilla extract, rum, and remaining salt. Let cool. Take the pan with the dough, place foil over the dough, and fill with weights (beans or ceramic balls). Bake for 12 minutes, carefully remove, take out the weights, and bake for another 5 to 10 minutes (watching to prevent burning). Let cool in the pan.
Step 8
Lightly beat the eggs in a separate bowl and gently add to the sugar mixture, beating with a mixer for about 10 minutes until airy. Add the chopped pecans and mix again. Pour the mixture into the baked crust and arrange whole pecans on top.
Step 9
Bake for 50 minutes, remove, and let cool completely.
Step 10
Serve the pie at room temperature with a scoop of vanilla ice cream (or whipped cream).
