Description
Recipe for a 22 cm pie dish.
Ingredients
- Apple 20 oz
- Sugar 5 oz
- Wheat Flour 10 oz
- Salt ½ spoons
- Ground Cinnamon 1 tablespoon
- Butter 5 oz
- Meyer Lemon Juice 1 tablespoon
- Ground Nutmeg ½ spoons
- Corn Starch 0 oz
Step-by-Step Guide
Step 1
In a bowl, mix the sifted wheat flour, 0.5 teaspoon of salt, and 20 grams of sugar. Add the cubed butter (150 grams) and crumble it with a fork. Gradually start pouring in ice-cold water (50-70 ml), quickly kneading the dough with your hands. You may need a little more or less water; the goal is for the dough to come together and become elastic.
Step 2
Roll the dough into a ball and divide it in half. Shape each half into a ball and roll each one out into a disk about 3 mm thick and 26–27 cm in diameter. Place them on a baking sheet or board dusted with flour and refrigerate for 30 minutes to 1 hour.
Step 3
At this time, prepare the apples: peel them, remove the seeds, and cut them into two-centimeter cubes. Place the apples in a deep bowl, add 100 g of sugar, cinnamon, nutmeg, a pinch of salt, and lemon juice. Mix well. Melt 30 g of butter and stir in the starch.
Step 4
Remove the dough from the refrigerator, place the first portion in the baking dish (trim any excess if necessary), evenly distribute the apples on top, spread the butter-starch mixture over the filling, and cover with the second half of the dough. Pinch the edges to seal, make slits on top, and place in a preheated oven at 430°F. After 10 minutes, reduce the temperature to 355°F and bake until done, about 30–35 minutes.
Step 5
Allow the finished pie to cool and serve warm with ice cream or whipped cream.
