Ingredients
- Chopped almonds 10 oz
- Sugar 0.6 cups
- Salt ¼ teaspoon
- Egg white 2 pieces
- Vanilla extract ¼ teaspoon
- Almond ½ teaspoon
- Ground dried cherries 15 pieces
Step-by-Step Guide
Step 1
Preheat the oven to 355°F. Grease 2 baking sheets with butter and line with parchment paper.
Step 2
In a food processor, combine 2.25 cups of almonds, reserving 15 whole nuts, and half of the sugar. Process until finely ground.
Step 3
Using a mixer, beat the egg whites with salt until stiff peaks form, then gradually add the remaining sugar. Beat well and fold in the almond mixture, vanilla extract, and almond extract.
Step 4
Form small balls from the dough, place them on the baking sheets, and slightly flatten them. Press a cherry or whole nut into the center of each. Bake for 25 minutes until golden brown. Let cool on the baking sheet for 5 minutes, then transfer to a serving plate.
