Alsatian Onion and Bacon Pie
Ingredients
- Butter 5 oz
- Wheat Flour 1½ cups
- Water 2 tablespoons
- Bacon 5 oz
- Spanish onions 4 pieces
- Vegetable Oil 1 tablespoon
- 10% cream 10 fl oz
- Farm fresh eggs 4 pieces
- Thyme 2 tablespoons
- Ground Black Pepper to taste
- Salt 1½ teaspoons
Step-by-Step Guide
Step 1
For the dough, mix the flour and softened butter, 0.5 tsp of salt, and water. I melted the butter.
Step 2
Knead the dough and place it in a 26 cm springform pan, forming the edges.
Step 3
Refrigerate for half an hour.
Step 4
Slice the bacon into thin strips and brown it in a hot skillet.
Step 5
Place on paper towels to drain excess fat.
Step 6
Peel the onions and slice them into thin half-rings.
Step 7
Brown the onions in the same skillet used for the bacon until translucent.
Step 8
Mix the bacon with the onions, adding 1 tablespoon of flour. Let it cool.
Step 9
Mix the eggs with the cream, season with salt and pepper, and add the chopped thyme.
Step 10
Spread the onion and bacon filling over the cooled dough and pour the egg mixture over everything.
Step 11
Bake in the lower part of the oven for 45–50 minutes at 390°F.
