Almond Tuiles

Description
Store in an airtight container to keep them crispy. Original name — Tuiles aux amandes.
Ingredients
- Wheat Flour 0 oz
- Egg white 5 oz
- Powdered Sugar 5 oz
- Butter 0 oz
- Chopped almonds 5 oz
- Vanilla extract 0 fl oz
- Citrus Zest Mix 0 oz
- Salt a pinch
Step-by-Step Guide
Step 1
Whip the egg white with sugar and vanilla, then add salt and flour.
Step 2
Add melted butter, zest (to taste), and pre-roasted sliced almonds.
Step 3
Grease parchment paper with butter, allowing it to soak into the paper.
Step 4
Drop the mixture by teaspoon onto the parchment, spreading it evenly. The layer should be thin and round, approximately 9 cm in diameter. Use one teaspoon of the mixture for each cookie.
Step 5
Bake at 390°F until dark golden, about 6–8 minutes. Ensure they are well baked.
Step 6
To give the tuiles a curved shape, use a flat spatula to remove the cookies from the baking sheet and place them on a rolling pin or a bottle, or any cylindrical object.
