Almond Roll
Ingredients
- Chopped almonds 10 oz
- Sugar 1½ cups
- Farm fresh eggs 3 pieces
- Wheat Flour 2 cups
- Milk 5 fl oz
- Cinnamon 1 tablespoon
- Vegetable Oil 2 tablespoons
- Dry yeast 0 oz
- Powdered Sugar to taste
Step-by-Step Guide
Step 1
Dissolve the yeast in warm milk. Add salt, half a cup of sugar, and 2 eggs. Mix and add the sifted flour. Knead for 10 minutes, add warmed vegetable oil, and mix. Place the dough in a bowl, cover with plastic wrap, poke it in several places with a toothpick, and set it in a warm place for 2 hours. When it rises, punch it down and let it rest for another hour.
Step 2
Drop the almonds into boiling water and cook for 2 minutes. Place under cold water and peel. Roast the peeled nuts in a dry skillet, stirring constantly, for 10 minutes, then chop in a blender.
Step 3
Pour a cup of sugar into a saucepan, add half a cup of water, bring to a boil, and simmer over medium heat for 3 minutes. Remove from heat and whisk. Separate the egg white from 1 egg and beat it. Add the almonds and egg white to the saucepan, mix, and return to the heat. Cook for 3 minutes, then remove and let cool slightly. If desired, add 2-3 drops of almond essence.
Step 4
Place the dough on a floured surface, roll it out into a rectangle the size of the baking sheet and about 7 mm thick. Sprinkle with cinnamon. Spread the almond mixture over the surface dusted with powdered sugar. Roll it out into the same rectangle. Transfer it onto the dough and roll it into a log.
Step 5
Place the roll on a greased baking sheet, cover with plastic wrap, and let it rest for 30 minutes. Remove the wrap and bake in a preheated oven at 355°F for 40 minutes.
Step 6
Cool, slice, and serve.
