Step-by-Step Guide

Step 1

Prepare the pears. Bring water with added sugar and lemon juice to a boil in a large pot over high heat. Stir constantly until the sugar dissolves. Place the pears in the pot. Reduce the heat and cook the pears until they are very soft, turning them occasionally during cooking. Allow the pears to cool in the syrup. You can prepare the pears in advance, for example, a day before making the tartlet.

Step 2

Prepare the dough. In a blender, mix the sugar, almonds, and salt until the nuts are finely chopped. Add the butter and continue blending until a soft, homogeneous consistency is achieved. Add the egg yolk, then the flour. Knead the dough until it becomes uniform and firm enough. Cover the dough with plastic wrap and let it rest for 2 hours.

Step 3

Prepare the filling. Using a blender, finely grind the almonds and flour. Add the white sugar, then the butter, and mix until homogeneous. Add the egg to the mixture. Blend everything again. Place the resulting mixture in a medium-sized bowl, cover it, and let it rest for another 2 hours.

Step 4

Place a baking sheet in the center of the oven and preheat it to 375°F. Roll out the dough into a circle on parchment paper, which will help you place the dough in the mold. Distribute the overhanging dough along the edges of the mold. Prick the dough all around the perimeter with a fork. Place the mold with the dough in the freezer for 10 minutes.

Step 5

Cover the dough with foil and fill it with dry beans — this is necessary to prevent the dough from rising. Bake the dough in this form until the edges are baked, approximately 20 minutes. Remove the foil with the beans and place the dough back in the oven. Bake until it turns golden brown, about 10 minutes. Cool the tartlet base. Reduce the temperature to 345°F.

Step 6

Evenly distribute the almond filling over the baked tartlet base. Cut the pears in half and remove the core. Then slice each half into thin slices. Carefully arrange the pear slices on the surface of the tartlet. Each slice should slightly overlap the previous one. Bake the assembled tartlet until the filling is set, about 55 minutes. Cool the tartlet. For serving, you can use powdered sugar, whipped cream, and almond flakes.
