Almond Pastries
Ingredients
- Wheat Flour ⅓ cup
- Salt a pinch
- Egg white 4 pieces
- Meyer Lemon Juice ¼ teaspoon
- Ground Almonds ½ teaspoon
- Sugar ½ cup
- Coconut Milk 2 tablespoons
- Desiccated coconut ½ cup
- Powdered Sugar 1 cup
Step-by-Step Guide
Step 1
Prepare 6 molds with a capacity of about ¾ cup.
Step 2
Sift the flour and salt.
Step 3
Beat the egg whites with lemon juice and ground almonds using a mixer. Gradually add sugar and whip until frothy.
Step 4
Add the flour to the mixture and knead the dough. Distribute the dough into the molds and bake for 20–25 minutes until the pastries are cooked through. Cool and remove them from the molds.
Step 5
Mix the coconut milk with powdered sugar. Drizzle the resulting glaze over the pastries and sprinkle with shredded coconut.
