Step-by-Step Guide

Step 1

To prepare the meringue, take 1 chilled egg, separating the whites from the yolks. Add 40 g of sugar to the egg whites and beat until a white foam forms, about 7-10 minutes.

Step 2

Transfer the mixture to a piping bag and pipe randomly onto a baking sheet. Bake the meringue at 210°F for about 40-50 minutes.

Step 3

For the semifreddo mixture, crush the almonds into crumbs. Beat 1 egg with 50 g of sugar until white foam forms. Separately, whip the cream to a creamy texture. Mix the crushed almonds with the egg and cream mixture. Transfer the mixture to a piping bag and freeze.

Step 4

To prepare the chocolate sphere, melt the white chocolate in a water bath and add cocoa butter, mixing well. Take a silicone mold with round cavities and coat the bottom of the mold with the chocolate mixture. For 2 servings of dessert, distribute the chocolate mixture among 4 molds, leaving 1 tablespoon for sealing the spheres.

Step 5

Place the mold with chocolate in the freezer for 30 minutes.

Step 6

Once the chocolate has set, remove the chocolate molds and seal them using the remaining chocolate.

Step 7

Take a pastry tip and heat it. Carefully make a hole in the chocolate sphere with the hot tip.

Step 8

Fill the chocolate sphere with the frozen semifreddo mixture.

Step 9

Plate the dessert and garnish with meringue, fresh mint leaves, and strawberries and raspberries. Enjoy your meal!
