
Almond Oatmeal Cookies

Description
Almond flour and oatmeal flour can be made in a blender. I used all the ingredients 'by eye', so feel free to experiment!
Ingredients
- Almond 5 oz
- Wheat Flour 5 oz
- Oat flakes 5 oz
- Egg white 2 pieces
- Sugar 0 oz
- Liquid dark chocolate 0 oz
- White Chocolate 0 oz
- Vanilla salt a pinch
- Citrus Zest Mix 1 teaspoon
- Butter 0 oz
- Baking Powder a pinch
- Chopped almonds 20 pieces
Step-by-Step Guide
Step 1
Mix almond flour and oat flour, add vanilla, zest, and half of the wheat flour.
Step 2
Melt the butter and pour it into the dry mixture.
Step 3
Chop the chocolate into pieces and fold it into the slightly cooled dough, otherwise it will melt.
Step 4
Beat the egg whites with sugar until stiff peaks form and fold into the mixture.
Step 5
If the mixture is too runny, add the remaining flour. The dough should be like creamy cottage cheese.
Step 6
Scoop onto a baking sheet lined with parchment paper using 2 teaspoons, spaced apart (12 pieces per sheet), and decorate with almonds.
Step 7
Bake in a preheated oven at 160–355°F for 15 minutes.
