Ingredients
- Egg white 0 oz
- Sugar 15 oz
- Water 5 fl oz
- Glucose Powder 0 oz
- Honey 10 oz
- Nuts 10 oz
- Dried Turkey 5 oz
- Nutmeg to taste
- Ground clove to taste
- Ground Cinnamon to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Whisk the egg whites and 30 g of granulated sugar with a whisk for about ten minutes, until the egg whites become stiff.
Step 2
At the same time, in one saucepan, bring 360 g of sugar to a boil with water and glucose, while in another saucepan, heat the honey.
Step 3
When the honey reaches 250°F, add it to the egg whites while continuing to beat. Immediately after that, pour in the sugar syrup, which should have reached a temperature of 300°F by that time.
Step 4
Quickly add spices, nuts, and chopped dried fruits to the mixture, which should have a glue-like consistency, while it is still warm. Stir well.
Step 5
Once the mixture has slightly hardened, shape it as desired, pressing it firmly, and place it in the refrigerator for a couple of hours.
