Ingredients
- Sugar 10 oz
- Egg white 2 pieces
- Almond 5 oz
- Glutinous Rice Flour 0 oz
- Almond ¼ teaspoon
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
Using a mixer, beat the egg whites until peaks form. Gradually add sugar, one tablespoon at a time, and continue to beat until the mixture is thick and smooth.
Step 3
Fold in the almond flour, rice flour, and almond extract.
Step 4
Line a baking sheet with parchment paper. Use a teaspoon to drop the cookies onto the sheet, leaving enough space between them.
Step 5
Bake for 12–15 minutes. Remove from the oven and cool on the baking sheet. Carefully peel off the parchment paper.
Step 6
Prepare the ganache and let it cool slightly until it becomes thick. Spread cream on the bottom of each cookie and sandwich them together.
