Almond macarons with chocolate filling
Ingredients
- Ground Almonds 5 oz
- Egg white 3 pieces
- Powdered Sugar 5 oz
- Brown Sugar 2 tablespoons
- Cream of tartar ½ teaspoon
- Red Food Coloring to taste
- Liquid dark chocolate 5 oz
- Cream (40%) 5 fl oz
- Brandy 1 teaspoon
- Butter 0 oz
Step-by-Step Guide
Step 1
In a blender, combine ground almonds and powdered sugar.
Step 2
In a large bowl, beat the egg whites with a mixer until well whipped, then add the cream of tartar and brown sugar. Beat again until well combined.
Step 3
Gently fold in the almond mixture and a few drops of food coloring to achieve a light pink batter.
Step 4
Transfer the mixture to a piping bag and pipe small mounds onto a parchment-lined baking sheet, spaced about 5 cm apart, slightly flattening them with your finger. Let them sit for 60 minutes.
Step 5
Meanwhile, preheat the oven to 320°F.
Step 6
Bake the macarons for 10–15 minutes until ready, cool them for a while on the baking sheet, then carefully peel them off the paper and let them cool.
Step 7
In the meantime, melt the chocolate with the cream over low heat, stirring until smooth. Add the brandy and softened butter, and mix well. Let it cool.
Step 8
Place a small amount of filling on each cookie and top with another cookie, like sandwiches. Allow to set in the refrigerator for about 30 minutes.
