Ingredients
- Chopped almonds 10 oz
- Farm fresh eggs 2 pieces
- Vanilla salt 1 teaspoon
- Powdered Sugar 1 cup

Step 1
Pour boiling water over the almonds, peel them, dry, and chop finely. Whip the egg whites to a thick foam (not dry!), continuing to whip, add the powdered sugar, and whip for another 5-8 minutes. Then gently fold in the almonds and vanilla. Mix well.
Step 2
Spoon the prepared cookie mixture onto a baking sheet lined with parchment paper in rings (using a spoon or piping bag), and bake at 340°F for about 20 minutes, until the cookies start to brown.
