Ingredients
- Sugar 5 oz
- Egg white 3 pieces
- Coarse Salt a pinch
- Chopped almonds 20 oz
- Almond 0 fl oz
- Limoncello 2 spoons
- Salt a pinch
Step-by-Step Guide
Step 1
Preheat the oven to 320°F. Pour the egg whites into a small bowl, add half a tablespoon of sugar and a pinch of salt, and beat until soft peaks form.
Step 2
Use a blender to grind the almonds into fine crumbs (set aside 30 whole almonds for decoration). In a bowl, mix the ground almonds with almond extract, the remaining sugar, and salt. Pour in the egg mixture and knead the dough.
Step 3
Moisten your hands with limoncello and shape the dough into evenly sized balls, about the size of a walnut. Place them on a baking sheet lined with parchment paper, then gently press down on each ball with your palm to flatten them. Lightly press a nut into the center of each cookie.
Step 4
Bake for twenty minutes (or a little longer) until golden brown. Let the cookies cool.
