Ingredients
- Chopped almonds 15 oz
- Sugar 3 cups
- Farm fresh eggs 10 pieces
- Breadcrumbs ½ cup
- Butter ½ tablespoon
- Cream ½ liter
- Vanillin ¼ teaspoon
Step-by-Step Guide
Step 1
Beat the eggs with sugar until pale. Separately prepare the almonds by rinsing 400 g of almonds, drying them, and grinding them in a mortar or passing them through a meat grinder. Mix the resulting almond paste with the eggs and sugar and beat everything together for 10–20 minutes.
Step 2
Then bake two cakes from the dough; for this, pour the dough into two springform pans or two frying pans of the same size, greased with butter and sprinkled with breadcrumbs, and place in the oven to bake for 12–15 minutes.
Step 3
Separately prepare the cream mixture. For this, pour ½ liter of cream into a saucepan, add 1 cup of sugar and a little vanillin, place on the heat, and cook, stirring, until it thickens (the color should be light brown); after that, remove the cream mixture from the heat, cool it, and beat with a spatula.
Step 4
Place one cake on a plate, spread a layer of cream mixture on it, smooth it out, and cover with the second cake. Spread the top of the cake with the cream mixture, sprinkle with chopped, browned almonds from the oven, and serve.
