- Almond 5 oz
- Lemon 1 piece
- Powdered Sugar 10 oz
- Chicken Egg 4 pieces
- Vanilla salt 0 oz
- Wheat Flour 0 oz
- Amaretto Liqueur 2 spoons
- Chopped almonds 0 oz
Step-by-Step Guide
Step 1
Blanch the almonds and chop them.
Step 2
Use a grater to zest the lemon, then squeeze out the lemon juice.
Step 3
Beat the egg yolks with powdered sugar until thick and frothy.
Step 4
Sift the flour, then combine it with the almonds and lemon zest.
Step 5
Whisk the egg whites with 0.5 teaspoon of lemon juice. Gradually incorporate the yolk mixture into the egg whites. Combine with the almond flour and knead the dough.
Step 6
Preheat the oven to 375°F. Place the dough in a greased baking pan and bake for 40 minutes. Check the readiness of the sponge cake with a wooden skewer.

To prepare the filling, chop the almonds. Lightly toast them in a dry skillet.
Step 8
Sift the powdered sugar and mix it with 2 tablespoons of lemon juice and almond liqueur to create the glaze. Drizzle the glaze over the cake and sprinkle with "almond flakes."
