Algerian Semolina Cookies

Ingredients

  • Semolina 2 cups
  • Water 1 cup
  • Vegetable Oil 3 tablespoons
  • Salt 2 teaspoons

Step-by-Step Guide

Step 1

In a deep bowl, pour in 2 cups of semolina, add salt, and mix with your hand.

Step 2

Add 3 tablespoons of vegetable oil and mix everything together (again with your fingers).

Step 3

Pour in half a cup of water, mix thoroughly, and add a little more water to knead the dough into a firm ball.

Step 4

Divide the dough into three to four smaller balls. Roll the balls into sausages with a diameter of 1.5 cm.

Step 5

Flatten the sausages with a knife and cut them into pieces 3–4 cm long.

Step 6

In a heated frying pan, pour in vegetable oil so that the cookie pieces are half submerged in the oil.

Step 7

When the oil is hot, place the cookie pieces in and fry on one side until lightly golden, then flip. When the cookies harden and turn golden on both sides, place them on a paper towel to drain the oil and cool.

Step 8

Serve the finished cookies with honey, jam, or simply on their own.
