Ingredients
- Egg white 3 pieces
- Vanilla salt a pinch
- Potato protein 1 tablespoon
- Powdered Sugar 1 cup
- Meyer Lemon Juice ½ teaspoon
Step-by-Step Guide
Step 1
Whip the cold egg whites until stiff peaks form, gradually adding the powdered sugar and vanilla. At the end of whipping, squeeze in a few drops of lemon juice.
Step 2
Sift the starch and gently fold it into the egg white mixture.
Step 3
Transfer the egg whites to a piping bag with a nozzle and pipe the pastries onto a silicone mat in the shape of small peaks.
Step 4
Bake-dry in the oven at 90–210°F for two hours (leave the oven door slightly ajar).
