First of all, you need to carefully separate the egg whites from the yolks, as we will only need the whites. To do this, crack the egg approximately in the middle and, transferring the yolk back and forth between the two halves, pour the egg white into a prepared container. It is very important! The container into which you pour the egg whites must be clean and dry.

Add a pinch of salt to the egg whites.

After that, beat the egg whites with a mixer until stiff peaks form, so that even if you turn the bowl upside down, the egg whites do not spill out.

Next, gradually add the sugar while continuing to beat.

In the end, you should have a very thick mixture (if you run a fork through it, it should leave traces).
Step 6
Preheat the oven to 210°F (no higher, otherwise the meringue will darken). Line a baking sheet with parchment paper and spoon the meringue onto it.
Step 7
Bake the meringue for 1.5 to 2 hours (if for 1.5 hours, they will be chewy inside; if for 2 hours, they will be drier). Don't be discouraged if it doesn't turn out right the first time. Although the dish is not very complicated, it can be quite tricky.
