Description

This is a wonderful alternative to pies. It does not use semolina or flour, only starch for stabilization. The airiness is achieved by whipping the egg whites separately and adding them at the end. You can use any berries you like. The small amount of sugar also indicates a more balanced approach, close to a healthy eating protocol. By the way, sugar can be replaced with a sweetener, and vanillin with vanilla sugar. Using gelatin, the berries and syrup are gelatinized, giving an interesting taste and appearance to this baked dish. The casserole is good both warm and cold.
