African Pea Soup with Apples
Ingredients
- Onion 2 heads
- Butter 3 tablespoons
- Curry 1 teaspoon
- Apple 1 piece
- Wheat Flour 1 tablespoon
- Chicken Broth 15 fl oz
- Green Peas 5 oz
- Salt to taste
- White Pepper (whole) to taste
- Cream 3 tablespoons
- Herbs 1 bunch
Step-by-Step Guide
Step 1
Bring the chicken broth to a boil.
Step 2
Add the peas and cook until tender, then blend.
Step 3
Chop the onion and sauté in butter.
Step 4
Peel the apple and dice it. Add to the onion and sauté. Sprinkle with flour and mix well.
Step 5
Combine the onion-apple mixture with the pea soup. Bring to a boil and cook for 10 minutes. Season with salt and pepper.
Step 6
Garnish the finished soup with chopped herbs and add cream.
