Zucchini Salad with Feta
Ingredients
- Courgette 15 oz
- Chicken Broth 15 fl oz
- Tarragon 3 tablespoons
- Onion 1 head
- Vegetable Oil 3 tablespoons
- Garlic 1 clove
- Long-Grain Rice 5 oz
- Feta cheese 5 oz
- Tomatoes 2 pieces
- Pitted olives 0 oz
- Ground Black Pepper to taste
- Chopped Sage Leaves 2 tablespoons
Step-by-Step Guide
Step 1
Wash the zucchini and cut into cubes. Then blanch in boiling broth for about 2 minutes. Remove with a slotted spoon and place on a plate.
Step 2
Drizzle the zucchini with vinegar and vegetable oil, and mix. Peel and finely chop the onion and garlic. Add to the boiling broth with rice.
Step 3
Cook on low heat for 30 minutes. Wash the tomatoes and cut into cubes along with the feta cheese. Coarsely chop the olives.
Step 4
Add them to the zucchini, add the rice, and mix everything. Season with pepper. Let it sit for 10 minutes. Sprinkle with parsley. Serve with dark bread.
