
Yuzu and Kumquat Cocktail

Ingredients
- Gin 0 fl oz
- Lime Juice 0 fl oz
- Yuzu Juice 0 fl oz
- Calamansi puree 0 fl oz
- Pineapple 20 oz
- Sugar 0 lbs
- Water 15 fl oz
- Prosecco 0 fl oz
- Kumquat 0 oz
- Banana Leaves to taste
Step-by-Step Guide
Step 1
Prepare the pineapple syrup. Add sugar to the water, place it over heat, and bring to a boil. Remove from the heat and let it cool.
Step 2
Add the pineapple flesh to the syrup and let the mixture sit for 5 hours.
Step 3
Muddle the kumquat and place it in a shaker. Add the gin, lime juice, yuzu, calamansi puree, and 30 ml of pineapple syrup. Shake all the ingredients together in the shaker.
Step 4
Strain the cocktail into a prepared glass filled with ice.
Step 5
Add Prosecco to the glass.
Step 6
Garnish with lime leaves and kumquat.
