Young Potato Salad with Lemon Zest and Herbs
Ingredients
- New Potatoes 25 oz
- Grated Lemon Zest 1 teaspoon
- Meyer Lemon Juice ¼ cup
- Coarse Salt to taste
- Ground Black Pepper to taste
- Chopped Sage Leaves ¼ cup
- Chopped Green Onions ¼ cup
- Olive Oil 2 tablespoons
Step-by-Step Guide
Step 1
Cut the potatoes into pieces and boil them in salted water, unpeeled, until tender for 10–12 minutes.
Step 2
Meanwhile, in a bowl, mix the lemon zest and juice, season with salt and pepper. Transfer the potatoes to the bowl and mix. Chill for 1 hour.
Step 3
Add the herbs and olive oil to the potatoes. Season with salt and pepper.
Step 4
Before serving, let it sit at room temperature for a while.
